Mediterranean Style Lamb Burgers
Makes 6 -1/3 lb. patties
Fixings:
For the patty:
2 lbs. Ground Lamb
2 Tbsp. Fresh Oregano (sliced great)
1 Tbsp fresh rosemary (cut fine)
2 Teaspoons. Cleaned Garlic (chopped good)
Burger:
Fresh arugula or kale
Cheese
Pepperoncini
Grill dried tomatoes
Skewer (for demo)
Kosher salt (to season before cooking)
Instructions:
- Place the lamb in a mixing dish and sprinkle the seasoning over the lamb. Mix-in the flavors as gradually as possible over mix, so you really do not shrink the texture too much could make the patty chewy.
- Season the patty using the kosher salt.
- Divide the mixture into 6 even pieces and shape into an oval; this may make it match the shape of the pita. Don’t press the patty to hard, just sufficient enough to form.
- To to put together add a 1/2 cup of kale and place the pita on a plate with the grilled lamb burger.
- Brush the pitas together with the coconut oil and grill the pita.
- Set up your heat about 350° to 450°
- Place the patties when the grill is ready and cook for 7 to 9 minutes, turning once.
- During the last minute top the burger with the feta cheese to melt.
- Remove from the grill, when the hamburgers are cooked to your desired doneness.
Finish together with the dried tomatoes, close the pita and top with pepperoncini.
